Ingredients

  • 12 ounces fettuccine or your favorite pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional, for a subtle heat)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

    1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    2. Sauté the Shrimp:
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the shrimp, seasoning lightly with salt and pepper. Cook the shrimp for about 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

    3. Prepare the Alfredo Sauce:
In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute until the garlic is fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir continuously, then add the grated Parmesan cheese, allowing it to melt and thicken the sauce. If you prefer a bit of spice, sprinkle in the red pepper flakes. Season with salt and pepper to taste.

    4. Combine Pasta, Shrimp, and Sauce:
Return the cooked shrimp to the skillet. Add the drained pasta and gently toss to coat evenly with the creamy sauce. If the sauce seems too thick, gradually add the reserved pasta water until you reach your desired consistency.

    5. Garnish and Serve:
Sprinkle the chopped fresh parsley over the dish for a burst of color and freshness. Serve immediately while warm, and enjoy the comforting flavors of your Creamy Shrimp Alfredo Pasta.
