Cream Cheese & Herb Cucumber Sandwich Recipe

 

This refreshing sandwich is perfect for a light lunch or a quick snack. The cream cheese and mayonnaise blend with fresh herbs and crisp cucumber slices creates a satisfying, flavorful bite every time.


Ingredients

  • 8 ounces cream cheese, softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon chopped fresh chives
  • ¼ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 English cucumber, thinly sliced
  • 1 loaf white bread (or bread of choice), crusts removed

Instructions

  1. Prepare the Spread:
    In a small bowl, use a hand mixer to beat the cream cheese and mayonnaise until smooth. Mix in the dill, chives, garlic powder, and salt and pepper to taste.

  2. Assemble the Sandwich:
    Spread the cream cheese mixture evenly on one side of each slice of bread. Arrange the thin cucumber slices over half of the bread slices. If desired, sprinkle additional herbs over the cucumbers.

  3. Finish and Serve:
    Top with the remaining bread slices. If you prefer, remove the crusts before cutting. Finally, cut each sandwich into three pieces. Serve immediately, or cover and store in the refrigerator for up to 24 hours.
